The weave structure is called Waffle Weave. It makes lots of small cells providing for a dense and thick fabric. Very often, people think there is some sort of elastic yarn incorporated into the fabric but there isn't, they're all cotton.
I've found using one a different experience. It's big enough to wrap around, not a quick dry as with conventional towels, but it leaves enough moisture on the skin to provide a smooth rubdown while drying. They stretch a bit when they're damp and dry as quickly as any thick cotton towel. They'll become softer and more absorbant with washings. On the loom, they were woven 60" wide and 115" long. It's the nature of the weave to "shrink" making the finished fabric thick. They weigh about 2 1/4 pounds!
